Whats Growing On: Wellspring Kombucha
Kombucha is one of the newest popular drinks coming to breweries and bars and we have one company right here in North-Central Florida that is brewing it.
So what exactly is kombucha you ask? Wellspring Kombucha founder and brewmaster, Ahren Tsacrios says, "kombucha is a probiotic beverage made with cultured sweet tea it's then flavored with fruit juices and carbonated to taste wonderful while also being healthy.“
One of the keys to producing quality kombucha is the fermentation process. Tsacrios starts with fair trade organic high-quality teas and then steeps the teas. He then introduces them into the tanks with a kombucha culture and those cultures then consume the tannins from the tea and the sugars in the tea. The outcome is a probiotic-rich beverage which is also teeming with antioxidants.
Wellspring kombucha is at the union street farmers market every Wednesday where you can grab a growler or a bottle. They are also at some local bars and breweries.
What sets wellspring kombucha apart from other companies is that everything is done locally here and Tsacrios says he understands the importance of supporting local businesses. He says, “as a long-time Gainesville resident, I’ve been here since 1981, I realize the importance of supporting our local economies, our craftspeople. It’s where you get the highest quality products.”
